Massaged Kale Salad

In a salad bowl add:
1 bunch kale remove stems by tearing off kale
1/4 cup extra virgin olive oil
1/4 cup honey
1 clove garlic minced
1/2 cup raisins
2 Tbsp. pine nuts

Use clean hands and massage ingredients for 5 minutes. By doing this, the kale softens and flavors blend together. You can also add sliced up fresh fruit once you are finished massaging, strawberries work great.

    Yummy & easy. I didn’t have pine nuts, so we used sesame seeds toasted. Worked great and tasted delicious!

    Here is something similar – also yummy. After trimmng the kale, place in boiling water for about 4-5 minutes. Drain and set aside. In skillet, heat a couple teaspoons of olive oil and 2 cloves chopped garlic. Add in third cup of raisins for a minute, then add drained kale. When hot, remove from heat, add in a quarter cup of nuts (I used walnuts) and a tablespoon of chopped onion. Toss well and serve.
