Roasted Walnut & Garlic Vinaigrette

makes 4 quarts
2 cups walnuts, roasted
2 cups garlic, roasted
2 cups cider vinegar
3 cups vegetable oil
3 cups water
salt and pepper to taste
fresh or dried thyme
Coarsely chop walnuts and garlic. Mix together. Taste. Adjust
