16 cloves garlic, coarsely chopped
2 red onions, sliced thin
1 tsp honey
4 Tbs olive oil
2 medium potatoes, thinly sliced (about 2 cups)
1 cup zucchini, thinly sliced
1 cup peas or sliced green beans
1 cup cabbage shredded
1 cup sweet peppers, cut into large chunks

OR, instead of the above vegetables, about 1 cup each of 6 different garden vegetables
6 cups water
3 tsp salt
juice of 1 lemon
1 cup chopped fresh basil or 2 Tbs dried
1/4 cup chopped fresh thyme or 1 Tbs dried

Slowly sauté garlic, onions, and honey in olive oil until golden browned and slightly caramelized. Add vegetables, turn up heat and stir 3 minutes. Add water, salt, lemon juice, basil and thyme and simmer 15 minutes or until vegetables are barely done. For extra flavor add a dollop of aioli (garlic mayonnaise) or Pesto (basil-garlic sauce).
