Ingredients
1 spaghetti squash
salt and pepper
1 cup sour cream (can use lowfat or fat free to keep fat down)
1/4 cup freshly chopped green onions
1/4 cup Romano cheese, shredded (or powdered parm cheese)
Directions
Cook spaghetti squash by cutting in half, placing cut sides down and bake for one hour in a preheated 350F oven. Next preheat oven to 400F. Remove seeds from squash. Scrape squash strands into a mixing bowl and discard skin. Toss with green onions, sour cream, half of the cheese, and salt and pepper. Pour into a buttered baking dish, sprinkle with cheese and bake for 30 minutes. If not browned on top, turn on broiler and broil until browned. Watch closely. Allow to cool for a few minutes before serving.
This is lip smackin’ good! I did use a combination of romano/parm….and probably put a bit extra in….I do not always measure. One additional ingredient was Cory’s roasted peppers. I was a bit disappointed when the leftovers amounted to 1TBS. Glad of course that the whole family enjoyed. VERY EASY
